Hey there! Today I’m sharing one of my favorite low sodium recipes: Chicken Tex-Mex! This dish is packed with flavor, colorful veggies, and tender chicken, all without the extra salt. When I’m cooking, I usually measure with my heart, but for the sake of this recipe, I’ve included measurements. So, let’s get started!
Ingredients
- Sweet Peppers (4-5, chopped): These add a lovely sweetness and crunch to the dish. Use a mix of colors for a vibrant presentation.
- Jalapeños (1-2, diced): For a bit of heat, add more if you like it spicy or leave them out if you prefer it mild.
- Onion (1 medium, chopped): Adds depth and a subtle sweetness to the dish.
- Black Beans, No Salt Added (1 can, drained and rinsed): These beans add protein and a creamy texture to our Tex-Mex.
- Diced Tomatoes, No Salt Added (1 can): They bring a juicy, tangy element without the sodium.
- Mrs. Dash Taco Seasoning (1 packet): This seasoning is a lifesaver for adding that taco flavor without the salt.
- Chicken Breast (1 lb, cut into bite-sized pieces): Lean protein that soaks up all the Tex-Mex goodness.
- Zucchini (1 medium, diced about 2 cups): Adds a fresh, light crunch and bulks up the dish with more veggies.
- Corn (1 cup, fresh or frozen): Sweet and delicious, corn is a Tex-Mex staple.
- Olive Oil (2 tbsp): For sautéing our veggies and chicken to perfection.
- Tortilla Chips, Unsalted or Lightly Salted: Perfect for scooping up all the deliciousness.
- Soft Corn Tortillas: Great for making soft tacos or serving on the side.
How to Make It
- Prep Your Ingredients: Chop all your veggies, including the sweet peppers, jalapeños, zucchini, and onion. Cut the chicken into bite-sized pieces. Drain and rinse the black beans.
- Heat the Olive Oil: In a large skillet over medium heat, add the olive oil.
- Sauté the Veggies: Add the sweet peppers, jalapeños and onion.Cook until the veggies are tender, about 5 minutes.
- Cook the Chicken: Add chicken to the skillet and ½ packet of Mrs Dash Taco Seasoning and cook until it’s no longer pink, about 5-7 minutes.
- Add the beans, corn, tomatoes and zucchini: Stir in the black beans, corn, diced tomatoes and zucchini.
- Season It Up: Sprinkle in the remainder of the Mrs Dash Taco Seasoning and mix well. Cover and cook on low to medium. Let everything simmer together for 10-15 minutes to meld the flavors.
- Serve: Serve over unsalted or lightly salted tortilla chips, soft corn tortillas.
- Add a side: Add a side of fresh low sodium salsa or guacamole for extra flavor. Don’t forget a dollop of sour cream and Swiss Cheese!!

- 1 can Black Beans- No Salt Added Drained and Washed
- Tortilla Chips-Unsalted/Lightly Salted Optional
- Soft Corn Tortillas Optional
Instructions
