Flavorful Low Sodium Chicken Tex-Mex

  • 1 large skillet with a lid

Ingredients
  

  • 2 tbsp Olive Oil
  • 4-5 Sweet Peppers
  • 1-2 Jalapenos
  • 1 Medium Onion
  • 1 lbs Chicken Breast cubed- I usually use 2 large chicken breast
  • 1 Pkt Mrs Dash Taco Seasoning or Taco Seasoning mix of your choice
  • 2 cups Zucchini diced-Optional
  • 1 cup Corn Frozen or fresh
  • 1 can Diced Tomatoes - No Salt Added
  • 1 can Black Beans- No Salt Added Drained and Washed
  • Tortilla Chips-Unsalted/Lightly Salted Optional
  • Soft Corn Tortillas Optional

Instructions
 

  • Chop all your veggies, including the sweet peppers, jalapeños, zucchini, and onion. Cut the chicken into bite-sized pieces. Drain and rinse the black beans.
  • In a large skillet over medium heat,, add the olive oil.
  • Add the sweet peppers, jalapeños and onion. Cook until the veggies are tender, about 5 minutes.
  • Add chicken to the skillet and ½ packet of Mrs Dash Taco Seasoning and cook until it's no longer pink, about 5-7 minutes.

  • Mix in the black beans, corn, diced tomatoes and zucchini.

  • Sprinkle in the remainder of the Mrs Dash Taco Seasoning and mix well. Cover and cook on low to medium. Let everything simmer together for 10-15 minutes to meld the flavors.
  • Serve over unsalted or lightly salted tortilla chips, soft corn tortillas.

  • Add a side of fresh low sodium salsa or guacamole for extra flavor. Don’t forget a dollop of sour cream and Swiss Cheese!!
